It's really good!  The chocolate adds a touch of elegance and flavor.  

Sugar-Free Banana Cream Pie

Sugar-Free Banana Cream Pie


Crust for a 9” pie, prebaked and cooled

1 pkg.             Jello™ sugar-free vanilla instant pudding, 1.5 oz. size

2 ½ c.              whole milk

1 t.                   vanilla

2                      large bananas, ripe but not overripe

Optional:  3 T. finely grated sugar-free dark chocolate, such as Simply Lite brand


  1.  Prebake the crust as per the recipe directions.
  2.  When the crust is cooled, sprinkle 1/2 the chocolate evenly over      the bottom inside.
  3.  Prepare the pudding as per the directions, using only 2 ½ c. milk.    Whisk the milk in gradually to prevent lumps.  Stir in vanilla.
  4.  Slice the bananas and distribute the slices evenly over the  chocolate.
  5.  Pour the pudding over the bananas, swirl the top a bit, cover, and  chill completely (4 hours).
  6.  Before serving, decorate the top with a sprinkle of finely grated chocolate.
