Pie of the Month

Maple's Mark Peach Pie
  • Prep Time: Gobs. Start early. Let it cool at least 3 hours.
  • Baking Time: 55-65 minutes. Use a crust protector after about 30 minutes.

Maple's Mark Peach Pie

"Combine so many things to love and you get this pie: a lightly carmelized blend of maple syrup and bourbon and butter, over fresh peaches, all topped with a toasted pecan streusel that crunches just a bit.  The judges thought it deserved a Best of Show award."

Sweet Potato Pie
  • Prep Time: 2.5 hours
  • Baking Time: 45 minutes

Sweet Potato Pie

It’s creamy smooth and has deeper, richer flavors than pumpkin.  A very satisfying pie and easy to make.  Be sure to serve it with whipped cream!  This is an updated recipe, which happened to win a blue ribbon for a Pie Pal at the NM State Fair Pie Contest.

Caramel Apple Pie
  • Prep Time: 1 hour, 10 minutes plus baking
  • Baking Time: 1 hour

Caramel Apple Pie

When you’re looking for a special dessert, here’s one that brings together the best of the season:  apples, caramel and nuts. Sweet & nutty, just like the holidays!

Blue Wave Pie
  • Prep Time: 1 hour
  • Baking Time: 15 minutes for prebaked pie crust

Blue Wave Pie

Cherry Sunflower Pie
  • Prep Time: 1 1/4 hours
  • Baking Time: 45 - 55 minutes

Cherry Sunflower Pie

Cherry pie is good, any cherry pie!  And this one, blessed by a layer of chocolate ganache under the flavorful cherries and topped by a crust designed to look like a sunflower, is exceptional.  One fan said, 'This recipe is a national treasure!'   It won a blue ribbon at the New Mexico State Fair.

Smashing Fresh Peach Pie
  • Prep Time: 35 minutes + time for glaze to cool, then chill finished pie for 2-3 hrs
  • Baking Time: 12-16 minutes for the single crust

Smashing Fresh Peach Pie

Smash those peaches!  Really.  Get the best ones, the tree-ripened ones, and smash a few to cook up as a glaze that will hold the remaining fresh, uncooked slices together in a crisp crust.  Oh!  So good.

Boysenberry Lattice Pie
  • Prep Time: 10 minutes plus crust
  • Baking Time: 1 hour

Boysenberry Pie

If you are lucky enough to have boysenberries, you are one lucky baker!  And here's a recipe to make you feel even luckier.

Fresh Apricot Pie
  • Prep Time: 25 minutes plus crust
  • Baking Time: 60 minutes

Fresh Apricot Pie

It's made with fresh apricots, those delicate, sweet gems of June and July.  They shine in this pie!  It's also an easy pie to make.

Sunshine Chiffon in Gingersnap Crust
  • Prep Time: 1 hour plus chilling
  • Baking Time: 10 to 12 minutes for crust

Sunshine Chiffon

It's got that tangy yet creamy thing going, highlighted by the gingersnap crust.  It's a nice change from most citrus pies.  And it won a blue ribbon at the state fair pie contest in the "Citrus" category!

Blueberry Lemon Tart
  • Prep Time: 35 minutes plus chilling (1 hour)
  • Baking Time: 50-60 minutes

Blueberry Lemon Tart

Combine two favorites -- blueberries and lemons -- and what do you get?  A new favorite!  The blueberries are nestled in a sweet-tart lemon custard, all enthroned on a buttery crust.

Blissful Blueberry Pie
  • Prep Time: 20 minutes
  • Baking Time: 1 hour

Blissful Blueberry Pie

Blueberry pies can be unpredictable -- either runny or too much thickener.  Not this one, though!  It takes advantage of the thickening power of pectin and creates beautiful slices every time.  This recipe uses less sugar than most recipes, which is also great.

Apricot Hamentash Pie
  • Prep Time: 30 minutes plus chilling the crust
  • Baking Time: 60 minutes

Apricot Hamentash Pie

It's part cookie, part pie and part tart.  The crust is flavorful and brings out the best in the fruit -- in this case, apricots and raspberries.  It's very amenable to a combination of fruit that you like!

Coconut Cream Pie
  • Prep Time: 45 minutes plus cooling
  • Baking Time: 20 minutes for pie shell

Coconut Cream Pie

For those of us who like coconut, this is a winner!  In fact, a variation of this -- a meringue version rather than cream-topped -- won "Best of Show" at the NM State Fair Pie Contest.  It's an extravagent dessert, one that makes people happy.  (Doesn't all pie make people happy?)

Red Hot Apple Pie
  • Prep Time: 1 hour plus time for apples to cool
  • Baking Time: 50-60 minutes

Red Hot Apple Pie

In a charming twist, this recipe brings a pretty red flare to your apple pie and the red hots add a subtle crispness.  The result is stunning!

Cherry-Raspberry Rave Pie
  • Prep Time: 20 minutes, plus the time to make, chill, and roll out the crust. If you put on a lattice top that adds time. I am notoriously slow, so it took me awhile!
  • Baking Time: About 60 minutes total.

Cherry-Raspberry Rave Pie

I love the tartness of the fruit with the flaky pastry. And since you can get frozen cherries and raspberries, you can make it anytime!
