Olive Oil Pie Crust

Some of us are looking for healthier versions of favorite desserts.  This crust recipe is based on olive oil and, while I've never made it myself, a friend says you don't taste the olive oil at all and it makes a delicious crust.  Let me know what you think!

Peach Pie

Peach pie is my favorite, made with ripe, juicy, flavorful peaches.  This recipe saves those perfect peaches from summer time as frozen slices so that you can enjoy great peach pie all year.  Really, I was pleasantly surprised at how good this is!  The judges thought so, too, giving it a blue ribbon at the state fair this year.

It's a winner!  It took a blue ribbon at the NM State Fair pie contest in 2013.  Plus, even better, it can be made with frozen fruit any time of the year.  Plus it has a beautiful color and deep flavor!

  • Baking Time: 45 minutes of oven time, plus chilling

Salty Dog Pie

If you like pink, as in pink grapefruit, you'll love this one.  It's very much like the cocktail made with pink grapefruit juice and vodka, served with a rim of salt (like a margarita).  It's refreshing and different, perfect for a summer party.

This is like those chocolate minty cookies sold by neighborhood girls in the Spring...only more creamy and "adult." A decadent indulgence. (I challenge you to find one ingredient in here with any redeeming nutritional value. But what the heck.)

Swiss Meringue

Ah!  A beautiful, airy crown for a rich cream or lemon pie.  This version of meringue is less complicated than the Italian recipe and provides reliable results. 

Baker's sugar has a finer crystalline structure than regular sugar, so it dissolves more easily, which is good.  It's available at most grocery stores.
