Ever have a Key Lime Truffle from a fancy chocolate shop? This pie celebrates that heavenly combination of lime and dark chocolate.
Crust:
1/3 c. shelled, roasted unsalted pistachios
2 c. flour
1/2 t. salt
2 T. sugar
1 egg yolk, broken
1/3 c. cold butter, cut into pieces
1/3 c. cold Crisco™, cut into pieces
5-6 T. ice water
Chocolate layer:
4 ½ T. butter, room temperature
¾ c. unsweetened cocoa powder, sifted
2 c. powdered sugar, sifted
¼ c. milk (plus a few drops if needed for the right spreading consistency)
¾ t. vanilla
Filling:
1 c. unsalted butter (2 sticks)
1 c. sugar, divided
1/3 c. fresh lime juice
1 T. finely grated lime zest
3 large eggs
3 large egg yolks
Optional: 1 very tiny drop green food coloring
4 t. water
½ c. shelled, roasted unsalted pistachios
Optional: a little grated dark chocolate (1 T.)
