This is like those chocolate minty cookies sold by neighborhood girls in the Spring...only more creamy and "adult." A decadent indulgence. (I challenge you to find one ingredient in here with any redeeming nutritional value. But what the heck.)

St. Patrick's Day Pie (a.k.a. Grasshopper Pie)

  • Prep Time: 30 minutes plus 2 hours freezing

St. Patrick's Day Pie (a.k.a. Grasshopper Pie)

Ingredients

Crust: 

  • 1 lb of Oreo cookies, filling scrapped out 
  • 4 T. butter, melted 

Filling: 

  • 3/4 c. creme de menthe  
  • 1/4 c. creme de cocoa (clear)
  • 1 c. sugar 
  • 1/2 c. light corn syrup 
  • 1 T. vanilla 
  • 1 qt. heavy whipping cream

Directions

  1. Pulse the cookies in a food processor until small, uniform crumbs form.
  2. Drizzle in the melted butter and pulse a few times until mixed.
  3. Pack crumb mixture evenly into the bottom of a springform pan or large pie pan, saving out 1-2 T. of crumbs to sprinkle on the top later.
  4. In a bowl, combine creme de menth, creme de cacao, sugar, syrup and vanilla. Stir until sugar is dissolved. 
  5. In a separate bowl, beat the heavy cream into soft peaks.
  6. Gently fold the green mixture into the cream until blended.
  7. Pour filling into crust and freeze for at least 2 hours.
  8. Remove springform pan sides and sprinkle with remaining crumbs before serving.
  9. Store remaining pie, covered, in freezer.
