A New Year's favorite or for any time you are ready to celebrate something that looks like snow and tastes like heaven!  

White Wonderland Pie

  • Prep Time: 35 minutes plus chilling (2 hours)
  • Baking Time: Just for the pie shell

Ingredients

9” baked pastry shell, cooled

1 T.      unflavored gelatin

¼ c.     water

½ c.     sugar

4 T.      flour

½ t.      salt

1 ½ c.  milk

¾ t.      vanilla extract

¼ t.      almond extract

½ c.     whipping cream

3          egg whites, room temperature

¼ t.      cream of tartar

½ c.     sugar

1 c.      shredded coconut (optional), divided

Directions

Soften the gelatin in the water and set aside.

Mix together in a saucepan the ½ c. sugar, flour and salt.  Gradually whisk in the milk and cook over medium low heat, stirring constantly, until it boils.  Boil (stirring) for 1 minute.  Remove from heat and blend in the soft gelatin.  Set aside to cool until the mixture is partially set (like egg whites).  Stir in the 2 extracts.

Whip the cream until it forms stiff peaks.  Gently fold into the cooled gelatin mixture.\

Whip the egg whites with the cream of tartar and the next ½ c. sugar to form a stiff meringue.  Carefully fold that into the cream/gelatin mix.  If desired, fold in most of the coconut.

Pile into the pie shell, sprinkle with more coconut if using, and refrigerate until set (at least 2 hours).  Serve chilled.

Baker’s Notes and Tips and Tricks

Deceptively delicious for such a simple pie!  No special tips except to allow time for chilling.  May be made as tarts, as shown.
