Pears  provide a lovely, subtle and elegant flavor for pies and tarts.  Add a little ginger, however, and you've got a new fall and winter favorite!

Ginger Pear Pie

Ginger Pear Pie

Ingredients

6          medium pears, ripe but not overripe

¾ c.     sugar

¼ c.     flour

¼ c.     candied ginger, finely minced

3 t.       grated lemon zest

2 T.      lemon juice

2 T.      butter

Pastry for double 9” crust

Directions

1.   Preheat oven to 450°.

2.  Roll out half the dough and line the bottom of pie plate.  Trim to edge of pie plate, cover with plastic wrap and chill.

3.  Peel, core and slice the pears to ¼” thickness.  Sprinkle with lemon juice and set aside.

4.  Mix remaining ingredients except butter. 

5.  Arrange pear slices in bottom crust, sprinkle on dry ingredients, and dot with butter.

6.  Add top crust, trim and crimp.  Cut steam holes.  Sprinkle with additional sugar, if desired.

7.  Bake for 15 minutes, then reduce heat to 375° and continue baking for another 40 minutes or until golden.  Cool completely before serving.
